The brisket of beef is a cut from the lower back or chest, a very large cut that is incredibly popular with smokers and the BBQ brisket, is a firm favourite amongst the BBQ community especially in America. The brisket of beef has a covering of fat on one side which packs bags of flavour which is released into the beef as it melts during cooking.

Beef Briskets Ideal For BBQ Cooking & Smoking Here At Tom Hixson Online Butchers


We have sourced our brisket beef cuts from high quality producers who utilise their skill and experience to produce top quality beef time and time again; in pride of place we have the USDA brisket of beef (the daddy of all BBQ beef brisket cuts). As mentioned above, the brisket of beef is extremely popular in the States, especially Texas, where the Texas bbq brisket can be found up and down the country in smoking pits and is the stable barbecue beef cut at these gatherings.

The USDA beef brisket cuts name carries its own reputation and this brisket well and truly lives up to it; the grain-fed, corn-fed finish ensures the brisket is exceptionally well marbled and results in favours being infused into the beef during the cooking process. Furthermore, the relaxed, tranquil lifestyle of the animal means the beef is wonderfully tender.

As with all our other beef products we ensure high quality and, as such, our briskets are always ‘choice’ grade beef. This all combines to give you a sensational beef produce. Outside of the USDA brisket we have the Australian brisket. This shows off the skill of our Australian friends beautifully as this piece is similarly tender and tasty. Given a grain-fed finish, this brisket is well marbled ensuring it too will flourish as a BBQ brisket or smoked brisket of beef. We have two versions of this brisket with the regular size and a slightly larger piece.

On occasion, we do have stock of the incredible, Wagyu Brisket. Rare and difficult to find, this brisket beef is delicious; it benefits from the natural propensity towards marbling of fat that wagyu has, and few others can compete with. If it is available be sure to take advantage of this as it won’t hang around.

Additionally, we have something rare and something special for you; the seaweed cured salt beef brisket. This brisket is uniquely and deeply flavoured by the seaweed natural salt curing process, and will offer you a different taste sensation. We have sourced this version from some of our British producers and we know their skill will ensure it is top quality. The salt cured beef brisket is famous for providing the filling to the famous New York Deli Sandwich.

The best way to prepare a brisket of beef is to slow cook your beef cut for a long time at a low temperature. The best cooking technique to achieve maximum flavour and texture is to cook your BBQ beef brisket or smoke your beef brisket, as this will ensure that the beef tenderises during cooking leaving a beef cut soaked in flavour from the melted fat, and will just melt in your mouth. You can achieve this result in an oven as well (although need to also be slow cooked over a period of time).
