Firstly, we have the bavette; a much underappreciated cut, this piece is cut from the bottom of the sirloin. As such, it has wonderful marbling and a tenderness you associate with the classic steaks. It is a fatty piece so has an abundance of flavour waiting to be released during cooking.

We have three versions of this cut for you. Firstly, the Australian bavette; this piece benefits from the skill of our friends Down Under being exceptionally tender and flavoursome. Our Australian cows are afforded large areas to roam and live a tranquil lifestyle ultimately resulting in highly tender beef. Furthermore, it also has a grain-fed finish which results in greater marbling of fat and even more flavour packed into this beautiful cut.

All this is true with our Halal Australian Grain-fed Bavette which is available so as many of our customers as possible can enjoy it (Halal certification available on request). We also have the British Bavette; the skill of our trusted British producers ensures this bavette is well balance and texture. It too has benefited from exceptional treatment as its tenderness and flavours attest to.  This version is very thinly sliced by our expert butchers leaving you with a lovely piece perfect for grilling.

Additionally, we have the truly spectacular Australian Grain-fed Tomahawk Ribeye. This piece has all the benefits of the Australian producers with their ability to ensure succulent tenderness whilst also ensuring a well marbled piece through their grain-fed finish. But the real appeal of the tomahawk is the bone. This is ultimately a ribeye steak with the bone left in and not only does this make for a dramatic, show-stopping presentation, but it means that an extra layer of flavour is released from the bone during cooking. This is something very special.

The bavette is a cut that, due to its thinly sliced nature, is well suited to grilling, frying, marinating and stir frying. It can be teamed with a wonderful variety of herbs and spices. The tomahawk can be treated like any ribeye so will be perfect roasted or can be sliced and grilled. Either way, it will look spectacular.
