The beef is so sought after as the natural marbling of the fat through the muscle results in cuts that are dripping with flavour when they are cooked. The fat melts slightly during the cooking process releasing more flavours and ensures that the steak is succulent and moist when you finally get to serve it up and wow your guests.

The hanging only serves to intensify the flavour and tenderness of the meat as the process sees some of the tissue broken down. Furthermore, residual water has a chance to evaporate which concentrates the flavour even further.

Within our Aberdeen Angus range we focus on the primal cuts of beef- the filletthe ribeye and the sirloin (or striploin).
