The environment these Australian cows are reared in massively contributes to the tender nature of the beef. The cows are raised in an unspoiled, natural environment with vast wide-open spaces for them to freely roam and graze. This ensures the ideal stress-free environment that results in calm, tranquil cow. The ultimate result of this is that the beef avoids the impact of excessive amounts of adrenaline, which can lead to chewy and tough beef. The producers we have handpicked to work with know exactly how to avoid this issue and, as a result deliver tender beef time and time again.

As well as a deliciously succulent taste, Australian beef also boasts some marvellous health benefits, particularly the grass-fed beef. The leaner beef is rich in the healthier, unsaturated fats and also contains higher levels of Omega 3 and 6. The beef is also an important source of protein, essential vitamins (particularly vitamin B and B12) and minerals, especially Iron and zinc. 

Tom Hixson have a large range of Australian meat products with both grass-fed and grain-fed finishes. We stock the traditional sirloin steak cuts, as well as fillet and ribeye cuts all regularly available. We also have some lesser-known but no less tasty cuts including the bavette and silverside. We also have a range of BBQ heavy weight cuts from the  beef brisket to short ribs. We also occasionally get in the visually spectacular tomahawk steak and the bone in rib eye.

We have also sourced an extensive range of Halal Australian meat products to ensure that as many of our customers as possible can enjoy the delights of Australian beef, no matter what your dietary needs are.

Within our Australian range we have a mixture of grass-fed and grain-fed products. The grass-fed finish produces a leaner piece of beef that gives a distinct and succulent flavour; the grain-fed finish results in slightly more fat being marbled through the beef, which results in different textures and flavour being released during cooking. The extra fat of the grain-fed cuts means it has more juices when cooked so produces a succulent piece of beef. If you choose the grass-fed variety be slightly more cautious when cooking it, as it contains less fat and can be easily overcooked and become chewy.  

The extensive range of products we provide means you can find a cut for almost every occasion. The traditional steak cuts in the fillet; sirloin and rib eye will provide you with a great set of options for roasting joints, succulent steaks or even a beef wellington in the case of the fillet. The bavette cut is great for marinating and then grilling but is also becoming more and more popular when being used as a regular frying steak. Our substantial grass-fed silverside provides you with an ideal large roasting joint.
