As with all our products, we have carefully selected and handpicked the producers we use and, as a result, we know that the meat coming out of the continent meets the high standards that we demand and expect. Parts of the content have a climate and conditions that are perfect for producing incredible beef. The sheer amount of open space given to the cows as they roam around on the grassy plains contributes to, and ensures, lean and tender meat as the cows are both happy and relaxed as they graze. This is crucial as it avoids a stressful lifestyle which contributes to the animal becoming tense which can result in the beef being tough and chewy. But the South Americans know exactly how to avoid this. Furthermore, the mild climate serves to enhance this relaxed lifestyle as do the abundance of streams and rivers to drink from; in short the environment is exactly what the cow would want.

The beef itself will either be grass-fed or grain-fed. All cows will spend the majority of their life eating the natural grasses on the plains and this ensures lean meat that is extremely flavoursome and is high in proteins, vitamins and omega 3 and 6. If you are looking for a healthy, lean cut of beef then grass-fed is the way to go. It is worth noting that, due to the slightly lower fat content, care must be taken when cooking the grass-fed beef as it can become tough if over cooked. But treat it with care and you will have a delicious meal on your hands. The grain-fed beef will be fed grain for the latter period of its life and this gives a different finish; the result is much more fat marbled through the beef. The impact this has is that, during cooking, the fat melts and gives an incredible juiciness and succulence that seeps through the beef.

We strive to assemble a range of cuts which will give you a sensational taste of what the continent has to offer. We have the traditional cuts of beef such as the rib eye, sirloin and fillet steaks that are sure to always be a winner. Additionally, given the South American appetite for rumprump tail and rump hearts we have also ensured we have as many of these available as possible. Additionally, we have delved deeper into South American society and sought out some more traditional cuts such as the Picanha (or the rump cap) and beef cupim. This range of products will provide you with something for every occasion, from a centre piece at a fine dining event, to a BBQ or even a roast. All these cuts will give you a chance to sample a bit of South American culture.

Whilst we currently primarily stock Uruguayan beef, a country many refer to as one big farm, we are always on the lookout for top quality products and will occasionally have products from Brazil, Chile, Paraguay and perhaps elsewhere- if it meets the gold standard we will make it available.
