Treat Your Dad This Father's Day

With Father’s Day just around the corner, it’s time to start thinking about how to celebrate your Dad.

What better way than to treat him to his favourite meal, a steak of course!

Here at Tom Hixson of Smithfield, we have put together a few recipes that will be sure to show your Dad you’ve been listening. We find our inspiration from our many fine dining and BBQ and smoke chefs in London and across the country. We combine this with simple steps and methods to achieve 5-star dining in your own home.

Steak can be served in many ways, but you want to be sure your meat will be the star of the dish and not be overshadowed by any sides. Treat your Dad to our favourite meaty Father’s Day recipes below. Each recipe is tailored to different meal occasions throughout the day, so we have you covered no matter what your Father’s Day plans.

To begin, we have included one of our top chefs, Ioannis Grammenos’, 4 top tips to cooking the perfect steak, no matter what the main meal recipe.

  1. Temperature - remove your steak from the fridge a minimum of two hours before you cook it so it will reach room temperature and not have a shock when you put it on the grill
  2. Seasoning - season your steak with salt, pepper and olive oil
  3. Ensure you have a really hot grill to seal the meat
  4. Leave your steak to rest the same amount of time that you cook it - this will remove all the excess juices and the middle will be kept nice and succulent

Steak and Eggs with Potato Rosti

This recipe is perfect for surprising your Dad to a hearty and delicious breakfast in bed. Its combines a crispy potato rosti, with eggs Dad’s way and steak, bacon or both.

To make the potato rosti:

-        2-3 grated potatoes (about 400g)

-        1 egg whisked

-        1 tsp flour

-        ½ small onion finely chopped

-        1 tbsp cooking oil

  1. Squeeze any excess water out of the grated potatoes, then tip into a bowl and mix well with the egg, flour and onion
  2. Heat oil in a pan over medium heat and soon in mixture into patty sized portions
  3. Cook for 5 minutes each size

Cook the eggs and steak/bacon to preference and serve together on the potato rosti.

Classic Steak Sandwich

Sometimes the best steak is served simply in a sandwich, where it can shine! We like our steak sandwiches on garlic butter ciabatta bread, toasted to the perfect crunch.

Garlic Ciabatta Toast:

-         225g butter, softened

-         2 cloves garlic, minced

-         1 tbsp parmesan

-         1 tbsp finely chopped parsley leaves

-         Salt and pepper to taste

-         1 ciabatta loaf or slices

  1. Preheat the grill with the rack 10cm from the heat.
  2. Mix together the butter, garlic, parsley, parmesan, and salt and pepper.
  3. Slice the ciabatta horizontally and spread the butter on both halves. Place on a tray and toast under the grill for roughly 2 minutes. 

Cook and slice your steak, add to the sandwich along with any of Dad’s favorite sandwich fillings.   

Bacon Wrapped Steak

This dish may be the most meatiest, tastiest and juiciest of them all. The smokey bacon encases the steak it all its glory, holding all the flavour inside. Serve alongside and salad, greens or even on its own as you wrap up Father’s Day on a high note.

  1. Preheat the oven to 230°C.
  2. Wrap the steak with the bacon and secure with food safe string or toothpicks.
  3. Season with salt and pepper.
  4. Heat an oven safe pan over medium-high heat. Add the butter and olive oil.
  5. Add the steak to the pan and sear on both sides until a crispy brown colour is prominent (about 1 minute per side).
  6. Place the oven safe pan into the oven to finish cooking. Cook until medium rare, 7 to 10 minutes.
  7. Remove from the pan, wrap in foil, and allow to rest for 5 minutes before serving.
