American Style Pancakes with Bacon and Maple Syrup

Serves 4

Very quick and easy

10 minutes to make and 10 minutes to cook.


  • 150g plain flour
  • 2 tsp baking powder
  • ½ tsp bicarbonate of soda
  • 35g caster sugar
  • 2 large  free-range eggs
  • 125ml  buttermilk
  • 25g butter, melted
  • Olive oil
  • 8 thick streaky bacon rashers
  • Maple syrup


  1. Firstly sift the flour, baking powder and bicarbonate of soda into a bowl. Then add the sugar and mix it all together, afterwards make a well in the centre.
  1.  In another bowl whisk the eggs, later adding buttermilk and melted butter. Pour this into the well of dry ingredients and gradually whisk in.
  1. Heat a large frying pan over a medium heat and add a few drops of oil and spread around. Then add large spoonfuls of the batter into the hot pan. Make sure to leave spaces between them so they don’t merge. 
  1. Cook for 1-2 minutes turn them over and cook on the other side, until golden brown. Keep warm in a low oven while cooking the remaining pancakes.
  1. Whilst cooking the pancakes, in a separate pan heat 1 tbsp of oil and fry the bacon rashers until crisp.
  1. Serve the pancakes in stacks with rashers of crispy bacon. Pour over with delicious maple syrup. Perfect for Pancake Day
