Beef Or Chicken Empanadas Made Easy

Ingredients:

  • 1/2Kg of Tom Hixson beef mince or chicken breast
  • 1/4 cup chopped onion
  • 1 teaspoon garlic powder
  • 1 tablespoon Worcheshire sauce
  • 1 can tomato sauce
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 2 teaspoon chilli powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 3 cups shredded cheese
  • 300g can enchilada sauce
  • 12 corn tortillas
  • Oil
 

Directions:

  1. If you're using beef, brown with the onion and garlic and drain. If you're using chicken, boil chicken breast in water, rinse and shred with a fork then add onion and garlic.
  2. Add the rest of ingredients; Worcheshire sauce, 1 can tomato sauce, 1 teaspoon paprika, 1 teaspoon oregano, 2 teaspoon chilli powder, 1/2 teaspoon cumin, 1/2 teaspoon black pepper.
  3. In a different skillet, heat oil.
  4. Add tortillas, to oil skillet, one at a time, 10 secs on each side.
  5. drain on a paper towel.
  6. in a medium size baking pan, pour enough enchilada sauce to coat the bottom of the pan.
  7. Fill each tortilla with a spoonful of the meat mixture
  8. Add cheese, onion (any additional extras) to the inside of enchilada at this time.
  9. Roll enchilada and place seam down inside pan, continue with remaining tortillas.
  10. Pour remaining enchilada sauce over enchiladas and top with cheese.
  11. Bake in oven for 20mins
  12. Top with sour cream.
