Beginners Brisket

  • 3Kg Tom Hixson beef Brisket
  • 1 pack of Matzo Meal cracker bread
  • 3 tablespoon vegetable oil
  • 15g unsalted butter
  • 1 large onion, sliced
  • Salt and freshly ground black pepper
  • 1L cold water
  • 1 tablespoon picking spice
  • 2 tablespoon whole-grain mustard



  1. Preheat the oven to 150oC
  2. Spread the Matzo meal onto a baking sheet, cover the brisket in the matzo meal and season generously with salt and pepper.
  3. Preheat a large skillet over a high heat. Add oil and leave until very hot.
  4. Add the beef to the skillet and cook for 7 minutes,  turn over and cook for another 5 minutes.
  5. Coat the inside of a large pan with butter, arranging the sliced onion in an even layer across the bottom.
  6. Lay ther brisket on top of the onions. Pour in water and sprinkle on pickling spice around the meat. Spread mustard on top of the beef brisket evenly.
  7. Bring to the boil on the hob. Transfer pan to the oven and cook whilst covered for 2 hours, while basting often. Turn the brisket over and cook for 15 minutes whilst basting often.
  8. Turn the beef over again, and cook uncovered for a further 1 hour and 15 minutes, basting often.
  9. Transfer the meat onto chopping board and cover in foil. Remove fat from cooking liquid with a spoon and transfer liquid to a saucepan, heating it gently.
  10. Slice the brisket thinly for serving, pouring heated cooking liquid on top before serving.
