Cumberland Sausages with onion mash and thyme gravy

Ingredients:

Servings: 4

  • 8 Tom Hixson Traditional Cumberland Sausages
  • 2 lbs potatoes
  • A dash of milk
  • 1 knob butter
  • 1 bunch spring onion
  • 1 teaspoon oil
  • 1 onion
  • 2 tablespoons flour
  • 1/2 pint of stock
  • 1 tablespoon thyme

Directions:

  1. Preheat the oven to 220 degrees.
  2. Put the Cumberland sausages in a roasting tin and cook in the oven for 15-20 minutes until brown and cooked through.
  3. Peel potatoes and cut into chunks.
  4. Place into a pan, cover with water and boil for about 15 minutes or until soft.
  5. Drain and mash with a splash of milk and a knob of butter. Stir in the spring onions.
  6. Heat oil and cook onion for 5-10 minutes until lightly golden and soft. Stir in flour then gradually stir in stock.
  7. Add fresh thyme leaves, bring to boil and allow to simmer and thicken for 5 minutes.
  8. Serve the sausages with the onion mash, and gravy with seasonal vegetables.
