Roast Sticky Chicken

Ingredients;

Servings: 6

  • 1 whole Tom Hixson corn fed chicken
  • 4 teaspoons salt
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon onion powder
  • 1 teaspoon thyme
  • 1/2 teaspoon gralic powder
  • 1/2 teaspoon black pepper
  • 2 large onion (peeled and quartered)

Direcetions

  1. Blend all the spices together and set aside
  2. Remove the neck and giblets from the chicken cavity, rinse well and pat dry with a paper towel
  3. Rub with spice mixture over the bird, both inside and out, then fill cavity with onions
  4. Wrap in resealable "food grade" plastic bag. Seal and refrigerate over night.
  5. Remove from plastic bag and place in a shallow baking pan
  6. Roast uncovered in oven for 5 hours on 250 F
  7. Baste with drippings every 30 mins after the first hour
  8. Leave to rest for 10 mins before carving
