Recipe For Beer Braised Short Ribs Of Beef

  • 3Kg USDA Beef Short ribs (buy here)
  • 75ml sunflower oil
  • 3 onions, thickly sliced
  • 450ml American-style lager
  • 700ml chicken stock
  • 140ml black treacle
  • small bunch thyme
  • 50g burnt oak wood chips (optional)
  • 100g ketchup
  • 100g American mustard
  • 75g brown sauce

For the marinade: 

  • 2 tablespoons cayenne pepper
  • 2 tablespoons smoked paprika
  • 1 tablespoon toasted cumin seeds
  • 2 tablespoons garlic powder
  • 1 tablespoon cracked black pepper
  • 6 tablespoons sunflower oil



Start with the marinade. Mix all ingredients including 3 tablespoons salt into a paste. Make a deep hole in each USDA beef short rib. Rub the marinade all over the short ribs, cover and chill overnight.

On the next day, preheat the oven to 150C. In a shallow saucepan heat the oil and fry the onions until they are dark brown on a medium heat. This may take up to 20 minutes. Pour in the beer and reduce by half. Add the stock, treacle, thyme and oak chips (if you are using them). Simmer for a few minutes. Place the marinated short ribs on a large roasting tin. Pour the liquid and cover tightly with foil. Put in the oven for 5 hours or until really tender. 

Once the ribs are cooked, remove them and rest them on a plate covered with foil. Strain the braising liquid into a saucepan. Once it has settled, take off he top layer of fat with a ladle, then set to simmer until it becomes thick and glossy. stir in the ketchup, mustard and brown sauce. 

Pull the short ribs apart and stir into the sauce. Serve with coleslaw and buns. Enjoy!
