Baked Baby Back Ribs With Apple And Cider BBQ Sauce, Apple And Fennel Slaw With Ranch Dressing

SERVES 4

Ribs and Marinade Ingredients:

  • 2 whole baby back ribs cut in half
  • 3 Braeburn or Granny Smiths apples peeled
  • 150ml of apple juice
  • 150ml of dark soy sauce
  • ½ tsp. of fennel seeds
  • ½ tsp. coriander seeds
  • Cracked black pepper
  • ½ tsp. cumin seeds
  • ½ tsp. of ancho chilli flakes (dried chilli optional on how spicy you like it)
  • 1 tsp. of cumin powder
  • 1 tsp. of paprika
  • 2 tsps. of smoked paprika
  • ½ tsp. of garlic powder
  • ½ pork or chicken bouillon cube

Method:

  1. Toast off the seeds in a hot pan, now add the rest of the spices to release the flavours.  
  2. In a blender add the rest of the ingredients and blend until smooth.
  3. Massage in half of the marinade onto the ribs, leave overnight but can be left for up to 48 hours.
  4. After left to marinade, wrap in paper and tin foil as in the video and bake in the oven at 130 for 3-4 hours.  Once soft and coming away from the bones easily, cover with half the barbeque sauce and put in the oven at 180 and leave open for another 30 minutes to get a nice glaze.

BBQ Sauce Ingredients:

  • 100ml cider vinegar
  • 50gms soft brown sugar
  • 150ml apple juice
  • Tbsp. of smoked paprika
  • Remaining marinade
  • Tbsp. of Dijon mustard
  • 100ml of hp or brown sauce
  • 100ml of shop bought smokey bbq sauce
  • ½ pork cube dissolved in 50ml of water

Method:

  1. Boil sugar and vinegar together, ad apple juice then marinade, lower the heat and stir in the rest of the ingredients.  Simmer for 30 minutes.
  2. I usually re-blend for a silky smooth finish 

Ranch Dressing For The Slaw Ingredients:

  • 200ml Greek yogurt
  • 200ml mayonnaise
  • 1tbsp. Dijon mustard
  • 1 tsp. Garlic powder
  • 1 tsp. onion powder
  • 1 tsp. sumac
  • Splash of apple juice
  • Pinch of salt
  • Chopped chives optional

Method:

Mix all ingredients together and season with salt if needed.

Apple Slaw Ingredients:

  • 2 no apples 
  • 1 bunch of spring onion red if possible chopped 
  • Quarter of red cabbage sliced 
  • Quarter of white cabbage sliced 
  •  1 head of fennel shaved  
  • 3 no Carrots shaved 
  • Quarter bunch Parsley chopped

Method:

Mix all ingredients with ranch dressing.
