The Perfect Christmas Turkey

  • 5Kg Turkey Saddle (view our poultry range here)
  • 2 cups kosher salt
  • ½ cup butter, melted
  • 2 large onions, peeled and chopped
  • 4 carrots, peeled and chopped
  • 4 celery stalks, chopped
  • 2 springs fresh thyme
  • 1 bay leaf
  • 1 cup dry white wine



  1. Rub the turkey all over, inside and out, with Kosher salt.
  2. Place the bird in large stock pot and cover with cold water, place in the refrigerator and allow to soak for 12 hours/overnight
  3. Preheat oven to 350 degrees F (175 degrees C).
  4. Rinse the turkey and discard brine mixture
  5. Brush the turkey with half the melted butter. Place breast side down on a roasting rack in a shallow roasting pan.
  6. Stuff the turkey cavity with 1 large onion, 2 carrots, 2 celery stalks, 1 spring of thyme and a bay leaf. Scattering the remainder around the bottom of the roasting pan and cover with white wine.
  7. Roast uncovered for 3 ½ to 4 hours in the preheated oven, until internal temperature of the thigh reaches 180 degrees F (85 degrees C).
  8. Turn the turkey breast side up after about 2 ½ hours through roasting time and brush with remaining butter.
  9. Allow bird to stand for 30 minutes before carving.
