Cheese & Bacon Stuffed Picanha

  1. Dice the bacon and cheese and mix with the oregano.
  2. Cut the fat excess from the top of the picanha beef cut and save for later
  3. Cut a hole all all the way through the middle of the picanha.
  4. Overturn the meat (so fat is on inside) and stuff the meat with bacon cheese and oragano mixture, closing both sides of the hole with bamboo skewers.
  5. Cover a roasting tray in rock salt, place the meat on top using the excess fat from beef to cover the meat, keeping it succulent.
  6. Cook for 40mins on 220oC
  7. Fry garlic in a frying pan until golden.
  8. Once cooked, remove the fat from on top of meat and sprincle on garlic.
