Iberico Beef With Olives & Almonds

  • 1 Kg Iberico steak
  • 1 large sliced onion, sliced
  • 1 large garlic clove, finely chopped
  • 2 large tomatoes, pelled, seeded and chopped
  • 1 heaped teaspoon of cinnamon
  • 100g green olives, pitted
  • 100g almonds, blanched
  • 500mm stock
  • 1 glass red wine
  • Salt & black pepper



  1. Cut the Iberico beef steak into 5cm slices, coat with seasoned flour
  2. Preheat oven to 180C (Gas Mark 4)
  3. Heat the oil in casserole dish with the lid on until meat is brown on both sides.
  4. Add the onion to the casserole and fry for 10 minutes or until wilted.
  5. Stir in garlic, tomatoes and cinnamon. Then add olives and almonds.
  6. Add the meat back to dish, while adding the stock and wine and season with salt and pepper.
  7. Re-cover the dish and place back in preheated oven for two hours, stirring occassionaly.
