Marinated Grilled Onglet

Wednesday, 25 February 2015 14:43:54 Europe/London

Preparations take 15 minutes

Marinating lasts 2 hours and only 10 minutes to cook

Serves 4 to 6

  • 4 tablespoons Dijon mustard
  • 3 cloves garlic, smashed and finely chopped
  • Pinch of crushed red pepper
  • 2 sprigs of rosemary, picked and finely chopped
  • Juice and zest of 1 lemon
  • 2x 1/2Lb beef onglet steaks, trimmed, membrane removed and cut in half lengthwise
  • Kosher salt
  • Extra-virgin olive oil

  1. Firstly in a small bowl mix the Dijon, garlic, rosemary, lemon juice and zest, and crushed red pepper.
  2. Secondly smear the steaks with the mixture and place them the fridge for 2 hours, or overnight.
  3. When you would like to cook your steaks preheat the grill and season the steaks with salt.
  4. Brush and oil the grill when it is hot.
  5. After the flames have dissipated place the steaks on a hot spot on the grill and brush them with the excess marinade. Move the steaks out of the flame if there is a flare up.
  6. Grill the steak for 4 to 5 minutes on each side for medium rare, or longer for your desired texture. Remove the steaks from the grill and let them rest for 5 to 10 minutes.
  7. Lastly, slice the steaks and serve immediately afterwards.
