Spicy Argentine Chorizo Sausage Salad Recipe

Serves 4


  • 4 tbsp olive oil
  • 1 small ciabatta, torn into small bite size-pieces
  • 200g  sliced chorizo sausage
  • 250g cherry tomatoes
  • 2 tbsp balsamic vinegar
  • pinch sugar
  • 1 large ripe avocado
  • 150g bag baby leaf and herb salad


  1. First heat 2 tbsp olive oil in a large non-stick frying pan.
  2. Then place the ciabatta in the pan and fry for 8-10 minutes until starting to crisp and brown, toss occasionally to get a nice even crisp.
  3. Remove the ciabatta once done and place in a salad bowl.
  4. Finely slice the chorizo sausage and place in the pan and dry-fry for 2 minutes until it gives out a red oil, turn over to get a nice even cook too.
  5. Slice the cherry tomatoes in half and toss in with the chorizo.
  6.  Then cook over a high heat for 1-2 minutes until they start to soften.
  7.  Drizzle over the vinegar, add the sugar and season well.
  8. Slice up the avocado and along with salad and remaining olive oil toss into the sald bowl with the croutons.
  9.  Lastly empty the pan of chorizo and tomatoes over the salad and drizzle with pan juices.
  10. Serve immediately.
