With two coeliacs in the family we are often on a misson to find the best gluten free bread so that we can enjoy all our favourites from the Tom Hixson gluten free range including bacon sandwiches, burgers and hot dogs.
However to find it is often easier said than done which is why we decided to go to bread experts - Bread Ahead in Borough Market London and try out their gluten free loaf recipe at their weekend bakery school!
 
Here is the recipe for the delicious gluten -free loaf!
 
Ingredients
 
150ml x water (heated to 40-44°C)
125g x teff flour (or buckwheat)
25g x ground almonds
50g x Doves Farm gluten free plain whit flour
1/2 tsp x xantham gum
15g x chia seeds
1 tsp x fine sea salt
1 tsp x quick acting yeast
2 tbsp x olive oil
1 tbsp x honey
Extra Olive oil
 
Method
 
1 - Preheat oven to 200°C /fan 180°C/gas mark 6
2 - Measure the water
3 - Grease a 6 1/2''x 4 1/4'' tin with olive oil
4 - In a large bowl, combine the teff flour, ground, almonds, plain flour, chia seeds, salt and yeast and mix.
5 - Make a well in the centre of the dry mixture and add the olive oil, honey and a third of the water. Mix together and then add another third of the water, mixing well. Add the last third of the water and mix to combine. The dough will be quite wet, and more like a very thick batter than a dough.
6 - Pour this into the tin. Cover the tin loosely with cling film and place somewhere warm and draft free. Leave to prove for about 35 minutes. The loaf should rise to just below the rim of the tin. If it hasn't risen enough leave it for another 10 minutes.
7 - Place your bread in the oven and spritz all around the oven chamber with a water spray.
8 - Bake for 30-35 minutes. Don't open the door during baking as this may cause the loaf to collapse.
9 - Once baked, remove from the tin and leave to cool on a wire rack.
 
Once home we cooked up a load of Tom Hixson smoked back bacon, sliced the bread, toasted it and put lots of butter on! Served with tomato ketchup I have to say it wasnt far of the real deal when it comes to a bacon sandwich!
