Lamb Ribs can often be confused with a lamb rack, however both offer their own individual qualities. The rack is cut from the upper part of the ribs, joining the back bone. Lamb Ribs, however, come from the lower part of the rib cage, also known as the ‘spare ribs’. Lamb ribs tend to have a bit of fat on them, however the fat just needs a low, slow cooking method to allow it to render out giving the ribs a great flavour and reduce toughness of the meat.
