A very thin cut of beef taken from between the skin and the ribs. Similar to a flank steak. A popular cut in Argentina. It is normally stuffed or filled. The ingredients for the stuffing can vary from province to province, but mostly commonly include whole carrots, hard boiled, eggs and lots of black pepper. It is hard to find outside of South America but we have specifically requested it for those who love Argentinian cuisine and want to emulate it with their home cooking here in the UK.
