It is the perfect smoker's cut and lends itself to the low and slow method as it allows the fat from the marbling to render through the beef, creating an incredibly moist, tender and flavourful piece of beef.
A brisket is cut from the breast section of the cow beneath the ribs. Brisket are quite a large cut and is rich in the connective tissue. The brisket is a Whole Packer which is made up of two muscles being the Point and the Flat.
