Our Irish farming partners have worked hard to source these exquisite fillet tails. The cattle are raised in open green pastures in Ireland, where a stress-free lifestyle and grass-fed diet ensure a combination of tenderness and flavour.

The fillet tails sits beneath the ribs, next to the backbone. As the least worked muscle it is of optimum tenderness. This select breed has made it's name for providing rich flavours and a smooth texture.

When ordering this product, you will receive the Fillet Tail along with half of the midsection.
