The fillet is a prized cut, extremely tender with mouthwatering flavours. Sourced from the lower middle of the back and forms part of the sirloin. The fillet muscle is so tender because it’s the least working muscle, therefore making it incredibly soft. The fillet is a lean cut with little fat running through it but guarantees a succulent and flavoursome melt-in-your-mouth experience with every bite.
