Sourced from Ex Dairy cows. The maturation/rearing process is far longer (four years) than the normal farming practices (up to two years). This allows for a distinctive depth of flavour to form over time.

A notifier of this longer maturation process is a yellowing of the fat. Carotenoid pigments within grass trigger this natural yellowing, therefore the longer a cow grazes on grass, the more distinctive the yellow colour will be. Once the maturation is complete, our expert farming partners (Tamaco) then hand select the Ex Dairy cuts with exceptional levels of marbling for us.

Finally, it is dry-aged to enrich the incredible flavour profile even further.


*This product is frozen. It could begin to thaw out during delivery process. Therefore we do not advise refreezing it once you receive it.

A Côte de boeuf is the fore rib of beef with the main backbone removed and the ribs french-trimmed for extra finesse. All the marbling and flavour of the ribeye, with the rib cap of fat, which renders down as the meat cooks for a succulent finish.
